Ingredients

Units Scale
  • 1 rough chopped sweet or white onion
  • 2 tbsp light cooking oil, like grapeseed or avocado
  • 15 Habanero peppers, destemmed and deveined, roughly chopped
  • 7 mangos, peeled, corred, and diced
  • 1/3 cup honey
  • 2 tbsp salt
  • 2 tbsp paprika – sweet, hot, or smoked
  • 1 tbsp white pepper
  • 1/2 cups apple cider vinegar
  • 1 1/2 cups distilled white vinegar
  • 1/41/2 cup brown sugar
  • 1/3 tsp ground allspice
  • 1 tbsp ground cumin

Instructions

  1. Sautee diced onions in oil over medium heat until translucent and soft. You can also sautee the habaneros to mellow the heat a bit.
  2. Combine onions and remaining ingredients in a food processor, and blend until smooth.
  3. Pour sauce into a large pan and bring to a simmer. Simmer until thickened, 10-15 minutes.
  4. Pour into airtight containers and store in refrigerator.
  5. Note: Always wear gloves when handling habanero chili peppers. The capsaicin oil in hot chiles can cause pepper burns on your skin or in your eyes that can last for hours.
